Is there anything better than a sweet snack that packs a delicious crunch? This Caramel Churro Chex Mix is addicting and always a crowd favorite. I made a batch the other day and my friends kept saying “Get that stuff away from me before I eat the entire thing!” Haha! Sorry ladies!
My kids also love it and (since it comes together easily) I’m happy to greet them after school with this treat. This also makes the house smell heavenly which is a bonus!
I definitely know I will be making this Caramel Churro Chex Mix for some of our get-togethers this holiday season…you should too!

Preheat oven to 350 degrees. Line a baking sheet with aluminum foil and spray with nonstick baking spray.
Place cereal in a large heat safe bowl. Mix cinnamon and sugar in a small bowl and set aside. Combine butter, brown sugar, salt and syrup in a medium saucepan and heat over medium heat. Once mixture comes to a boil, stir constantly for one minute. Remove from heat and stir in baking soda. Next, pour mixture over cereal and mix until well coated.
Carefully, spread cereal onto the prepped pan and sprinkle 2/3 of the cinnamon sugar mixture over the cereal. Toss mixture with a spatula and bake for 5 minutes. Remove pan from oven and sprinkle remaining sugar over the cereal. Stir again with a spatula and bake for an additional 4 minutes or until golden brown.
Remove from oven. Stir mixture and let cool. The Caramel Churro Chex Mix can keep for a week in an airtight container.
