The Best Summer Zucchini Bread Recipe

My garden is producing zucchini faster than I can pick it!  Do you have the same dilemma?  If so, I have the Best Summer Zucchini Bread Recipe for you!

When my husband and I bought the house that I grew up in, I knew that I wanted to have a garden.  My mom always had one, and every summer she kept busy canning and baking from everything the garden yielded.  Gardening has been a learning experience for me, but one that I really enjoy!  Every year I seem to overplant and am left with an abundance of produce.  This year, my zucchini plants are out of control!  But you will not hear me complaining, because we all love zucchini in this house!  Grilled!  Sautéed!  Baked in bread and muffins!  Substituted for noodles!  Yummy!

One of my favorite ways to use up zucchini is by baking it into a bread.  My kids all eat it up and have no idea that there are actually vegetables hidden inside.  Win for this mama!  They like to spread butter over the entire slice while it is still warm and gobble it up!

This recipe makes a delicious bread that is almost cake-like.  It has the perfect consistency, and with added cinnamon and vanilla in the recipe, it is the perfect amount of sweet too!  Eat it with butter, or add in a cup of chocolate chips or walnuts to the batter for an added touch.  Perfect for breakfast or a snack!

Here are some tips to making the Best Summer Zucchini Bread:

  • Use my favorite grater or a food processor to get the zucchini the perfect size and texture.
  • The pan I like to use is a 9×5 loaf pan.  It makes the perfect sized loaf to slice.
  • Grate the zucchini before starting to mix ingredients.  Let the grated zucchini sit in a bowl by itself so some of the water drains off of it before you add it to the rest of the ingredients.

Yields12 Servings

 3 cups Flour
 1 tsp Cinnamon
 ½ tsp Vanilla Extract
 2 cups Sugar
 ½ tsp Baking Powder
 1 tsp Baking Soda
 1 tsp Salt
 3 Eggs
 1 cup Vegetable Oil
 4 cups Fresh Grated Zucchini

1. Preheat oven to 375 degrees. Grease three 9 x 5 bread loaf pans.

2. Mix all dry ingredients together.

3. Add in eggs, oil, vanilla extract. Mix together.

4. Add in zucchini and mix with a blender until blended together.

5. Divide batter evenly between three 9 x 5 bread pans. Bake at 375 for 40 to 50 minutes. Insert toothpick to make sure bread is done.

6. Cool on a wire rack.
