Teriyaki Turkey & Broccoli

Raise your hand if you love Aldi! We sure do! They have so many fresh and fun options. Just walking through the aisles always gives me meal inspiration. This recipe is made with all ingredients that can easily be found at Aldi.

The idea for this recipe was from a dinner our family had from Hello Fresh. Hello Fresh is one of those meal delivery kits. Ever tried one? All the ingredients are delivered to your doorstep and you create the meal with a handy recipe card. We maintained our subscription for over a year. That is, until my kids whined so much I decided to cancel…

They may not have enjoyed it, but my favorite part was the different flavors and ingredients that Hello Fresh meals used. It inspired me to mix up my usual dinner routine and try new things. Trying new things, however, is not the normal 7 year old’s idea of fun. Oh well!

Even though it has been awhile since we had a delivery, those recipes I made still remind me to look at ingredients a little differently and to encourage my kids to expand their palates.

To make this recipe as healthy as possible, I used ground turkey. Available at Aldi, this is a healthy twist on your usual ground beef dishes. Try it for tacos and pasta as well!

Aside from the ground turkey, brown basmati rice, teriyaki sauce and green onions, I picked up frozen edamame that steam in the bag. I also grabbed one of the Asian chopped salad kits to complete this dinner.

 1 cup brown basmati rice
 1 lb ground turkey
 2 tbsp vegetable oil
 2 broccoli crowns
 ½ cup teriyaki sauce
 4 green onions
 ¼ tsp ground ginger
 2 cloves garlic
 2 tbsp soy sauce

Cook rice according to package instructions.

Wash produce. Trim the broccoli into florets. Mince the garlic and slice the green onions thinly. Keep white and green parts of onions separate.

Season the ground turkey. In medium bowl add the whites of the onions, ground ginger, 1 tablespoon of the soy sauce, and the minced garlic.

Drizzle around a tablespoon of vegetable oil or sesame oil into a large skillet or wok. Cook broccoli approximately 8 minutes, or until crisp tender. Remove from pan and keep warm.

Drizzle another tablespoon of oil into the same skillet and brown the ground turkey.

When the turkey is finished cooking, add the teriyaki sauce and the other tablespoon of soy sauce. Simmer for 5 minutes on low heat.

Place serving of cooked brown rice onto plate. Top with broccoli and then the meat mixture. Sprinkle with the onion greens and sesame seeds (optional).

For the little ones, I recommend serving this ‘deconstructed.’ Do all kids not like their food to be mixed together?! I know mine don’t!

We had fun teaching the three year old how to get the edamame out of the pod. And he even asked for more ‘brown stuff,’ aka the cooked ground turkey mixture. 🙂
