Sour Cream Coffee Cake

It is the first official day of summer break at my house! So today is a good morning for coffee cake! Every morning is really…? This coffee cake using sour cream and a whole box of pudding is a family favorite. It is very easy to prepare and kid approved!

This is the recipe that my mom would prepare for sleepovers and vacations. Growing up my friends would always ask for this when they visited and I could count on every summer road trip to include a coffee cake.

I loved it so much I introduced it to my college roommate. We didn’t have an electric stand or hand mixer at the time. We wanted that cake so much that we took turns mixing with a wire whisk! The batter gets pretty heavy so we got our workout that day! ?? Trust me, you will love this one too!!!!

 1 box Duncan Hines yellow cake mix
 4 eggs
 1 cup sour cream
 1 small package vanilla pudding mix
 ¾ cup vegetable or canola oil
 ¾ cup sugar
 1 tbsp cinnamon
 ½ can prepared vanilla frosting

Preheat oven to 350 degrees. Gather all ingredients.

Combine all ingredients except cinnamon and sugar in your stand mixer or large bowl if using hand mixer. Beat on medium speed for 10 minutes.....

Prepare bundt or angel food cake pan. Layer half of the batter into bottom of pan.

Combine cinnamon and sugar in a small bowl. Sprinkle half of the cinnamon sugar mixture on top of the batter.

Follow with another layer of the rest of the batter.

Finish with the remaining cinnamon sugar mixture.

Bake for 50-55 minutes. Allow to cool.

Place half of container of frosting into microwave safe bowl. Microwave until melted. Drizzle frosting all over top of cake. Allow to cool and enjoy!
