Minimal effort and maximum flavor are exactly what this Slow Cooker White Chicken Chili provides! With a little bit of heat, this chili is perfect for an evening in on a cold night!
I have been making this soup since my oldest (now 11) was an infant. One day while I was sitting at home, newborn cuddled up in my arms and watching TV, I saw a home chef make a similar recipe on Rachel Ray. I thought the recipe looked good, but wanted to make make a few changes to make it a.) easier and b.) more suited to our tastes.
What was created is a comforting soup that I love to serve often. We love to change up the toppings; sour cream, tortilla chips, pico de gallo, chopped green onions, cheddar cheese, avocado slices…you really can’t go wrong. And all four of my kids will actually eat this soup, which is a huge win.
Helpful Notes:
- This recipe is for the slow cooker but since all ingredients are already cooked, you could also make in on the stovetop in 15 minutes. You just need to heat it up…so fast and easy!
- Pre-shredded cheese doesn’t not melt nicely in the slow cooker. Grating a block of cheese really is the way to go.

5 cups rotisserie chicken, shredded
32 oz box of low sodium chicken stock
3 cans great northern beans, drain 2 of the cans
16 oz jar Pace Mild Picante salsa
8 oz block of pepper jack cheese, grated
2 tsp ground cumin
2 garlic cloves, minced

Place all ingredients in slow cooker and stir. Cook on high until cheese is melted. Taste and add salt if needed.

Serve topped with chopped cilantro, sour cream, chopped green onions, tortilla chips, extra cheese, cornbread, etc. Enjoy!
