These simple strawberry shortcake cups are quick to throw together, and are so pretty and patriotic. Perfect for Memorial Day Weekend or the 4th of July! ??

Memorial Day Weekend is the unofficial kickoff for summer, full of backyard cookouts and pools being opened for the summer. If you are looking for a quick and easy dessert to take along to a cookout, these are perfect! There are only a few ingredients, and they are fun to eat, since they are served in their own cup.

Because I use angel food cake instead of the traditional pound cake, these strawberry shortcake cups are healthier and perfect for warmer temps. You can even eat two without feeling guilty! ?
To make this recipe, you will need:
- Angel food cake (store-bought or homemade — and by “homemade”, I mean the boxed kind where you just add water. ?
- Strawberries, cleaned and diced
- Blueberries, cleaned
- Whipped Cream
Simply cube your angel food cake into bite-sized pieces. Layer in the bottom of clear, plastic cups.

Add a layer of strawberries and blueberries.

Top with whipped cream and enjoy! That easy! And so good!
