Red, White & Blue Jell-O Poke Cake

Have you ever had a Jello poke cake? They are seriously the best! Super moist and flavorful and easy to make. Kids love to help make and eat them!

This sort of cake is perfect for summer. It is ideal for the Fourth of July when decorated with sprinkles or fruit. It is served refridgerated so it is cool and refreshing. It is also light in texture and taste…another plus for warmer weather.

These cakes can be made with any Jello flavor. If I am not making a special themed cake, I will usually choose strawberry. If using orange Jello you could create a orange dreamsickle cake! So many possibilities.

The secret trick to filling those little holes without a huge mess? A small plastic syringe. This is like what you might get with children’s liquid medicines. They are also available at the pharmacy. It makes it super easy to put small amounts of the Jello into each hole and avoid mixing of the colors if you are using two. On this 4th of July cake, there would be some areas of purple if the Jello mixes. The small syringe is a great tip, but using a spoon and pouring the Jello mixture over the cake can work too.

Below is the recipe for this simple cake. There are pictures of two great ways to decorate the cake. Start with an entire tub of Cool Whip and top with red, white and blue sprinkles or fruit. Everyone will love it!

Yields20 Servings

For Cake
 1 box Duncan Hines white cake mix
 3 large egg whites
 ¼ cup vegetable or canola oil
 1 cup water
For Jello
 2 3 oz boxes Jell-O (here I used red and blue)
 2 cups water
For Topping
 1 tub Cool Whip whipped topping
 assorted sprinkles or fruit (strawberries, blueberries, raspberries etc.)

Bake cake according to package directions. Allow to cool. Gather all ingredients.

Use a long pronged fork or chopstick or skewer to poke many small holes into the cooled cake.

Warm 1 cup of water in microwave for each color Jello that you wish to use in your cake. Warm water for 2 minutes. Then carefully stir in entire Jello packages- one into each bowl.

Use plastic measuring syringe to push Jello mixture into each hole. Alternate red and blue.

Fill all holes! Try to put different amounts of the Jello mixture into each hole.

Cover cake with entire tub of Cool Whip and top with sprinkles or fruit. Cover and refrigerate for at least 2 hours before serving.
