Preheat oven to 425 degrees.
Place eggs, milk, flour, sugar and nutmeg in a blender. Blend until well combined.
Add butter to a cast iron skillet and place in oven. Once butter is just melted, pour in contents of blender and place back in the oven. (No need to stir.)
Bake for 10 minutes or until peaks and sides are browned (Note: I use a rather large cast iron skillet. Depending on the size of your skillet, you may need to bake up to 20 minutes.) Once browned, lower temperature to 300 and bake for an additional 3 minutes.
Remove from the oven and sprinkle with powdered sugar.
My family loves to top their Dutch Baby with syrup. Other options are: berries and whipped cream, sliced bananas with a Nutella drizzle, and cinnamon sugar. Really, you can't go wrong with any topping. Enjoy!
