These country baked beans are delicious. Thick with bacon, a trio of bell peppers and sweet brown sugar, they are downright addicting!

Country Baked Beans

 1 lb bacon
 1 large yellow onion, diced
 1 red bell pepper, diced
 1 yellow bell pepper, diced
 1 green bell pepper, diced
 2 28 oz. cans of maple and cured bacon baked beans
 2 28 oz. cans of country baked beans
 ¼ cup barbecue sauce
 ¼ cup apple cider vinegar
 1 cup packed dark brown sugar
 ½ tsp red pepper flakes
 2 tbsp yellow mustard

Preheat the oven to 325 degrees.

Pour the beans into a colander to strain. Don't worry about draining all of the juices. Only a moderate drain is needed.

Set aside 6 slices of bacon. Dice the rest and put it in a large pot on medium-high heat. Add the onion and cook until translucent, stirring occasionally.

Stir in the bell peppers and cook for 2-3 minutes.

Add in all of the remaining ingredients (except bacon slices) and stir to combine. Cook until mixture is hot, stirring occasionally.

Pour into a deep baking dish and place the 6 bacon slices across the top.

Bake for an hour or until beans are bubbling and bacon slices are cooked.

Note: These Country Baked Beans are perfect to make ahead as they will stay warm for a long while after baking. The beans also freeze and reheat beautifully.
