Bacon-Wrapped Meatloaf

Bacon Wrapped Meatloaf

 1 cup milk
 6 slices bread
 2 lbs ground beef
 1 cup grated Parmesan cheese
 1 tsp salt
 ½ tsp seasoned salt
 freshly ground black pepper
  cup flat-leaf parsley, finely chopped
 4 eggs, beaten
 12 slices thin bacon (I actually like maple flavored but original is good too!)
 1 cup ketchup
 4 tbsp brown sugar
 1 tsp ground mustard
 hot sauce

Preheat oven to 350 degrees. Line the bottom of a broiler pan with aluminum foil and spray the top grill piece with nonstick spray.

Place the bread in a large bowl and pour milk overtop. Then add ground beef, cheese, salt, seasoned salt, pepper, parsley and eggs.

Combine the ingredients together with clean hands (take off any rings!).

Divide the mixture in half and make a loaf out of each half on a broiler pan.

Cover the loaves with bacon. Oftentimes I will cut the strips in half so they aren't too long. Tuck the bacon under the sides of the meatloaves.

Next, make the tomato gravy. Add the last 4 ingredients to a bowl and mix well to combine. (Add hot sauce according to your desired spice level.)

Pour some of the tomato gravy over the loaves and use a spoon to spread it around. (Don't put spoon back in the gravy.)

Bake for 45 minutes or until meatloaf is cooked in the middle. Serve with the remaining tomato gravy on the side.
