No bake mini pumpkin cheesecake pies are the perfect holiday dessert. They are easy to make and require no baking.
In a large bowl, add softened cream cheese to the bowl. Beat the cream cheese on medium speed until smooth.
Next, add can of pumpkin, ground cinnamon and pumpkin spice. Beat mixture together on medium speed until well combined.
Add in softened whipped cream into bowl. Using a spoon or spatula, fold the whipped cream into the pumpkin cheesecake mixture.
Place graham cracker crusts on a baking sheet. Add equal amounts of pumpkin cheesecake mixture into each crust.
Place the baking sheet of mini pumpkin cheesecake pies into fridge for 1-1/2 hours, until firm.
When pies are set, remove from fridge. Top with extra whipped cream, if desired. Enjoy!
