Using only three ingredients, Mint Oreo Balls are so easy to make and are a perfect sweet for St. Patrick’s Day.

Do you know what I love about St. Patrick’s day? It’s the fact that everyone is somehow Irish. That 10% Irish DNA overtakes everything else in people’s genetic makeup and they talk about the motherland (aka Ireland) like they are first generation transplants. I love that people bond over their “Irish” heritage and are a bit kinder to strangers because they are probably their 4th cousin twice removed after all. I find it super endearing and it’s possible I fall into the trap too (perhaps after a few green beers).

Every year I try to think of festive food to take to our St. Patrick’s Day parties, but outside of the regular Irish fare, it can be a bit challenging. So this year, I opted to go with the always crowd pleasing Oreo balls. Kids and adults alike love them and they are super easy with only 3 ingredients. I’m a bit of a purist when it comes to Oreos in that my favorite are the original ones. However, with St. Patrick’s Day coming up, I wanted to be a little more festive and make Mint Oreo Balls. And…I’m totally addicted.

Mint Oreo Balls

 40 mint Oreo cookies
 8 oz cream cheese (at room temperature)
 4- 4 oz. white chocolate baking bars

Place cookies in bowl of food processor. Pulse until finely crushed.

Add cream cheese and pulse until well incorporated.

Using a 1 1/2 tablespoon scoop, drop the cookie mixture onto a cookie sheet lined with wax paper and freeze for 15 minutes.

Meanwhile, melt chocolate according to package directions.

Roll each scoop of frozen cookie mixture into balls. One by one, place a ball on the flat side of a butter knife and pour melted chocolate over top to coat. Then slide Oreo ball onto wax paper and top with sprinkles if desired. Refrigerate until hardened. Enjoy!

Notes: Oreo balls should be stored in an airtight container in the refrigerator or freezer. To add a textural element, mix in mini chocolate chips before scooping out mixture.
