It is almost Valentine’s Day! It happens to be one of my favorite holidays! This year I am celebrating with these cute little “healthy’ candies!
If you follow us on Instagram, you will have seen my stories on ‘healthy’ ? candy. I know there is no such a thing, but these keto chocolate chips have 5 grams of fiber per serving and only 60 calories! In my approximate calculations, these little heart candies only have around 75 calories per piece. Woo hoo if you are still working on that New Year’s resolution.
The pomegranate seeds pop when you take a bite and the pistachios give it a special crunch. These would be great with peanuts, almonds, coconut or dried cranberries as well.
The Bake Believe brand chocolate chips come in both white and dark chocolate. After making both, I preferred the dark chocolate. It was hard to even tell that the sugar was missing! You need to try these!
Also, you asked and Pom Wonderful answered! No more messy pomegranate seed removal! Check out this handy dandy cup of seeds! ?? Take a little out for this recipe and throw the rest on a salad.
With only a couple ingredients, these are so easy. I used a silicone candy mold. Here is a link to a heart mold that you can have delivered before Valentines Day. Or try a non-heart one to use all year round!
My kiddos loved these, but go ahead and use some tollhouse semi-sweet chips if you think your family will miss the sugar! Here is my simple recipe:
Place entire bag of chocolate chips into a double boiler.
Stir chocolate chips frequently until smooth.
While chocolate is melting, rinse and drain pom seeds. Roughly chop pistachios if using.
Place a couple pomegranate seeds into the bottom of a silicone mold. Top with melted chocolate. Add a few more pomegranate seeds.
Sprinkle with kosher salt if desired.
Allow them to fully cool (around 1 hour). Enjoy!
