For most of you, school is well under way. Everyone is getting back into a routine and schedules are getting hectic. Weekends are now more important as this is the primary opportunity for family time. It is nice to plan weekend activities that give everyone something to look forward to. Today we have a super idea for getting the whole family to spend some time together in the kitchen. SUSHI!
You may be thinking that your family will not eat sushi. Do not let that stop you! Now is your chance to try new things! Here are a few recipes that everyone will enjoy: Classic California Roll, Deli Meat & Cheese Roll, and Rice Krispie Treat Sashimi.
Lets get rolling! 😉 To begin, you will need to order a sushi at home kit. Mine was from Williams and Sonoma but I have since found other sources for this. Check out this amazon version. Be sure to order one that has most of the dry ingredients included. If it does not include nori (seaweed paper) or sushi rice you will need to visit a specialty grocery store or order through amazon. Luckily, my kit had everything that I needed except the fillings: vegetables and fish.
There are very easy recipes included with the kit, however, I did modify mine a bit. The classic California rolls followed the recipe exactly but I also made my own shrimp tempura rolls. I wasn’t feeling super ambitious to put a breading on my shrimp to make them tempura, so I used a frozen breaded shrimp that I cooked just before rolling. Do not tell real sushi chefs about this hack! This sushi was just for our family and it turned out great. We were surprised how yummy and easy it was and how close it tasted to our favorite sushi place. I will include my recipes below.
The truth is, the kids ate the deli meat rolls and a thousand rice krispie rolls, but they also tasted the regular sushi. Involving the kids in the process encourages them to sample the finished product. This works better than you think! The kids may have only eaten the rice and the cucumber from the classic rolls, but they were exposed to different cuisine and different culture. All while being together as a family and not playing Fortnite! Ha- the best part!

Classic California Rolls
Cook rice according to package directions.
When rice is done cooking, lay it out on flat surface to cool.
In small saucepan combine rice vinegar, sugar, and salt. Cook until sugar dissolves.
Pour vinegar mixture over cooked rice and allow it to cool.
Wrap your sushi rolling mat with plastic wrap to prevent rice sticking. Prepare all sushi fillings.
Place nori lengthwise on mat. Grab about 1 cup of the cooled rice and spread it across entire nori sheet.
Sprinkle with 1/2 tsp sesame seeds.
Flip nori on mat so that the rice side is now face down.
Place the fillings in the center of the nori.
Roll mat away from you. Press rolled mat firmly to form roll.
Remove from mat and cut into 6 even pieces. Yum!

Lay deli meat flat in in single layer over cheeses.
Layer cucumber and carrots. Add any other veggies that you like!
Roll tightly and slice to look like sushi rolls. It is really just a wrap, but tell the kids it is sushi. Fancy! 😉

Instead, shape into little sashimi sized mounds.
Cut off enough Fruit By the Foot to wrap around rice krispie mound.
Add a Swedish Fish on top of the Fruit By the Foot. Enjoy!
