In a medium bowl, whisk together the milk, eggs, oil, vanilla, and pumpkin.
Pour the wet ingredients into the dry ingredients. Stir just until the batter is mixed together. There may be some lumps. Let the batter sit for 5 to 10 minutes.
Heat a large skillet over medium heat. Pour the batter by 1/4 cup scoops onto the hot skillet and cook 2 to 4 minutes per side.
To serve, top with butter, syrup, whipped cream, pecans, and/or cinnamon and sugar.
