When I first saw the recipe for these Copycat Thin Mint cookies, I was skeptical. No way could Ritz crackers dipped in Andes mints taste even remotely like Thin Mint cookies, let alone taste good at all. Well, I was wrong! Not only are these two-ingredient Copycat Thin Mint cookies easy to make, they are so good that I dare you to eat just one. They taste even better frozen, so make sure you throw some in the freezer. You will thank me later!
My very first “job” was as a Girl Scout. I remember having to sell cookies, back before my mom could text all our relatives or put it on Facebook. I had to actually call my aunts and go knock on my neighbors’ doors and ask if they would like to buy cookies. Of course, the cookies sold themselves. Everyone loved the Samoas, Tagalongs and the favorite was always Thin Mint cookies. Yep, pretty sure I just gave away my age, because I know they have updated the names of the cookies with more original boring names like “Peanut Butter Delight.”
Ready to have your mind blown on how easy these Copycat Thin Mint cookies are to make? This is a fun recipe to make with your kids. All you need are two ingredients and they are made in the microwave.
First, melt your Andes mints in the microwave. If you cannot find the Andes mint chips, you can use the Andes mints. Place in a microwavable bowl, and microwave in 30-second increments, stirring in between, until melted.
Using a fork, dip each Ritz cracker in the melted Andes mints, letting the excess chocolate drip off.
Place on wax paper or parchment paper. (Note: If you want the cookies to be smooth, with no bubbles, place upside down on the wax paper. I did not do this with my cookies, and you can see the bubbles that the Ritz crackers had.) Let harden. You can also place in the fridge if you would like to harden faster, but it doesn’t take long for these to harden.
