One of my go-to recipes when asked to bring a dish to share is this scrumptious guacamole. I must admit, I had never even tasted guacamole until I was in college. My mom never made it and if I ever did see it at a potluck, the green color always freaked me out a bit. My first experience with guac was tailgating at a Dave Matthews Band concert at Alpine Valley in WI. My friends had a huge bowl of this stuff and they were eating it on their burgers?! I decided to give it a try and there has been no turning back. I was in love!
I stumbled upon this recipe while watching Rachel Ray on the Food Network. I have tried other recipes since but nothing beats this one. It is super easy and perfect for everyone since it’s mild (no jalepeños, although I’m sure you could add one if you like things spicy!). Anytime I take this to share, there are NEVER any left overs. I also like to make this recipe to go with tacos or fajitas here at home.
Halve avocados, remove pits, scoop out flesh and place in a mixing bowl.
Squeeze the juice of 1 lemon over the avocado into the mixing bowl.
Mash the avocado with a pastry cutter, fork, or other tool of choice to the consistency of your liking.
Mince the clove of garlic and put the salt on top.
Using the back side of your knife (it's easiest when you use a knife with a wide blade), smash the garlic and salt together until it becomes a paste like consistency.
Add the garlic/salt paste to the avocado mixture and stir to combine.
Add the diced tomato and onion to the bowl and stir to combine.
For best flavor, cover the guac with plastic wrap, eliminating as many air bubbles as possible, and refrigerate for about 30 minutes.
Enjoy your guac with your favorite tortilla chips!
