Preheat oven to 450 degrees.
Boil potatoes in water over medium heat for 15-20 minutes or until fork tender. Drain. Spread potatoes out on a sheet pan lined with aluminum foil.
Smash potatoes using a meat mallet going horizontally and then vertically. (You can use any item that will give you similar results.)
Next, drizzle olive oil over the potatoes. Then, sprinkle on the rosemary. Finally, add salt and pepper to taste.
Roast potatoes for 15-20 minutes or until crispy and golden.
