Good morning to all the avocado lovers out there! Mmmmmm…there are so many recipes out there for preparing avocado toast. Today I am sharing my favorite twist on this nutritious dish!
Maybe it is my favorite because it is so delicious, or maybe it is because this recipe was inspired by a toast that we enjoyed in Napa! Either way, it is perfectly salty and sweet. Make this for a super healthy breakfast this week or save it for the perfect brunch side dish.
This flavorful spread tastes just perfect on toasted pieces of French or Italian bread. Simply broil the slices in the oven for 3-5 minutes.
It is also great with little rye bread squares. These squares are great especially if you are serving appetizers. I did not toast my rye bread for this recipe.
Cut and peel the avocados. Remove the seed. Sprinkle with juice of half of the lemon.
Mash the avocado with a fork to desired consistency.- It is ok to leave a couple larger pieces for texture!
Roughly chop cranberries, parsley and pistachios. Add all to mashed avocado and combine..
Add salt and pepper to taste. Do not under season!
Squeeze a bit more lemon juice over the top and stir.
Serve with toasted bread. Yum!

Tip: The lemon is key here! Just like in your favorite guacamole, the avocado will quickly begin turning brown. The juice of a whole lemon will prevent the spread from browning, but it will also flavor the mixture just a bit making it the perfect refreshing addition to your breakfast!
