
These country baked beans are delicious. Thick with bacon, a trio of bell peppers and sweet brown sugar, they are downright addicting!

I first made homemade baked beans a few years ago when I bought The Pioneer Woman Cooks: A Year of Holidays by Ree Drummond. Her recipe was delicious, but I wanted a bit more bacon and a better choice of beans. So, using her recipe as a starting point, I created my own. And my, oh my…these Country Baked Beans are amazing!
This recipe makes a ton! It is perfect for a family cookout or you can serve half to your family at dinner and freeze the other half!

These country baked beans are delicious. Thick with bacon, a trio of bell peppers and sweet brown sugar, they are downright addicting!

Preheat the oven to 325 degrees.
Pour the beans into a colander to strain. Don't worry about draining all of the juices. Only a moderate drain is needed.
Set aside 6 slices of bacon. Dice the rest and put it in a large pot on medium-high heat. Add the onion and cook until translucent, stirring occasionally.
Stir in the bell peppers and cook for 2-3 minutes.
Add in all of the remaining ingredients (except bacon slices) and stir to combine. Cook until mixture is hot, stirring occasionally.
Pour into a deep baking dish and place the 6 bacon slices across the top.
Bake for an hour or until beans are bubbling and bacon slices are cooked.

Note: These Country Baked Beans are perfect to make ahead as they will stay warm for a long while after baking. The beans also freeze and reheat beautifully.
