Irish Coffee with a dollop of Cinnamon Whipped Cream is the perfect treat for upcoming St. Patrick’s Day (or any time of the year, really).
I am not a coffee drinker. I know, you may have just gasped out loud. Who can be a mom and not drink coffee? Don’t all mothers survive on coffee?!?
Well, I guess I should clarify. I do like iced coffee and I do like flavored coffees that you cannot really taste the coffee flavor in. Oh, and add some alcohol to the coffee and I am ready to grab that coffee cup and say, “Cheers!”
I recently tried an Irish Coffee recipe that has a cinnamon whipped cream topping, and it is to die for. Adding a little Baileys and Irish whiskey to your coffee might just be what you need to get you through the day!
You can probably tell from how light my coffee is that I even added a little extra heavy cream, along with the Bailey’s and Irish whiskey. So if you are not a huge fan of the taste of coffee, try this trick. I promise you will love this treat!
This recipe is easy to make, and the homemade whipped topping just puts it over the top, in my books! Try to resist sticking your finger in and taste-testing it! I bet you can’t do it! Yummm!
Whip the heavy cream, powdered sugar, vanilla extract and cinnamon until soft peaks form.
Set aside.
In a blender, add the coffee, Irish whiskey and Bailey's Irish Cream.
Blend for 30 seconds.
Pour evenly between two mugs.
Top with a dollop of whipped cream.
