Bacon-Wrapped Meatloaf is so flavorful, filling and a total hit with my kids! Not much time goes into throwing it together, making it a perfect weeknight meal.
Growing up, I dreaded meatloaf night. I love my mom, but didn’t love her meatloaf. (Sorry Mom!) This Bacon-Wrapped Meatloaf is so different! It is tender, full of awesome flavor, wrapped in bacon and has a tangy sauce smeared overtop. It also gets cooked on a broiler pan allowing the grease to drain out versus the traditional loaf pan which holds all that in. Yuck!
I first found this recipe in my beloved “The Pioneer Woman Cooks” cookbook. Seriously, if you don’t have that cookbook, you are missing out! So many of our family favorites come from it. I have since slightly modified how I assemble and bake the meatloaf. The biggest difference is that I make two loaves of the mixture instead of one. They simply bake faster making it perfect for my always super hungry, can’t wait one more second for dinner, kiddos.
It is also our Halloween Dinner go-to as I wrap it sporadically with the bacon, throw some olive slices on for the eyes and call it “Mummy Meatloaf”. The kids go nuts.

Pioneer Woman Comfort Meatballs

Preheat oven to 350 degrees. Line the bottom of a broiler pan with aluminum foil and spray the top grill piece with nonstick spray.
Place the bread in a large bowl and pour milk overtop. Then add ground beef, cheese, salt, seasoned salt, pepper, parsley and eggs.
Combine the ingredients together with clean hands (take off any rings!).
Divide the mixture in half and make a loaf out of each half on a broiler pan.
Cover the loaves with bacon. Oftentimes I will cut the strips in half so they aren't too long. Tuck the bacon under the sides of the meatloaves.
Next, make the tomato gravy. Add the last 4 ingredients to a bowl and mix well to combine. (Add hot sauce according to your desired spice level.)
Pour some of the tomato gravy over the loaves and use a spoon to spread it around. (Don't put spoon back in the gravy.)
Bake for 45 minutes or until meatloaf is cooked in the middle. Serve with the remaining tomato gravy on the side.
