It is gonna be a good day when I have 3 overly ripe bananas laying on the kitchen counter! My kids go nuts for these banana muffins. The addition of a Vanilla Snak-Pak gives them a little extra “oomph” and they become so moist. If you don’t have a Snak-Pak…your muffins will still be delicious.
Banana muffins make the perfect breakfast, after school snack or sweet fix in the middle of the night. If you can spare a few, your friends will not be disappointed when you stop by with some to share!
Mash 3 large bananas and mix with white sugar until blended well.
Add egg, butter and pudding.
In separate bowl, combine dry ingredients: flour, baking soda and baking powder. Add dry ingredients to the wet and mix well.
Scoop muffin mixture into muffin tin. Then, top with a sprinkling of cinnamon and sugar.
Bake at 375 degrees for 20 minutes or until the tops are golden brown.

Of course you will have to eat one or two while they are still warm from the oven. But, if you can hold off on eating them all until the following day…seal them in an air tight container and they will be even more delicious!
