Easy Cauliflower Mash

All comfort and no guilt, this cauliflower mash is so easy and delicious. Its actually made in the microwave. So simple and perfect for a low carb lifestyle.

We are a few months into low carb eating for the entire house (kids too!) and this easy cauliflower mash recipe gets made at least once a week. Its super simple and so tasty. I honestly don’t miss mashed potatoes!

 1 large head cauliflower, chopped
 ⅓ cup milk
 2 tbsp butter
 1 tsp salt
 ¼ tsp freshly ground black pepper
 ½ tsp garlic powder

Place cauliflower and milk in a microwave safe bowl. Cover with a paper towel and microwave for 10 minutes. After time is up, carefully stir cauliflower and milk and microwave again for another 10 minutes or until tender. Leave bowl in microwave to cool for 5 minutes.

Next, transfer half of the cauliflower mixture to the bowl of a food processor. Puree until contents are smooth. Then, add the rest of the cauliflower mixture, butter and spices to the bowl. Blend until smooth. (Depending on size of your head of cauliflower, you may need to add a few splashes more milk to the food processor to achieve your desired consistency and more salt to taste.)

Transfer cauliflower mash to a bowl and top with a pad of butter if you're into that sort of thing. 😉 Enjoy!
