Summer Party Food

Summer parties are in full swing! Looking for something fun to bring? Besides the fabulous charcuterie board from last weekend, here are some of our favorite crowd pleasers for your next cookout!

Party Pinwheels

These party pinwheels are a perfect appetizer! This recipe makes a large amount, but they are gone within minutes when I take them to any gathering!

Prep Time25 mins

 16 oz cream cheese
 1 package Hidden Valley Ranch Fiesta Ranch dry mix
 2 cups Mexican shredded cheese blend
 1 cup chopped green onion (green ends only)
 12 burrito size tortilla shells

Soften cream cheese. Mix fiesta ranch dip packet into cream cheese. Chop green onions.

Spread thin layer of cream cheese on tortilla.

Scatter as many green onions as you like over cream cheese spread.

Spread thin layer of shredded cheese on top of cream cheese and green onions.

Tightly roll tortilla up.

Slice rolled tortilla into half inch slices. Serve immediately! Enjoy!

Ingredients

 16 oz cream cheese

Pizza Dip

I have a large family and we typically have about 40 people at all of our family gatherings. I am always asked to bring this Pizza Dip. I also bring it to a lot of our Book Club gatherings. It's a great dish to make a couple days ahead of your gathering. Just pull it out of the fridge and throw it in the oven! (I typically let it sit at room temperature for a half hour before cooking, to avoid overcooking the outer edge.) You can make it as simple or elaborate as you want. Kids and adults can't get enough of this dip.

Yields12 Servings

 8 oz cream cheese (room temperature)
 2 cups mozzarella cheese (shredded)
 15 oz pizza sauce
 ½ lb sausage (cooked and drained)
 ½ tbsp minced garlic (cooked with the sausage)
 1 tsp oregano
 ½ cup pepper jack cheese for top
 Any pizza toppings you like!

Mix the cream cheese, mozzarella, pizza sauce, sausage, garlic, Oregano and any other pizza topping you like.

Spoon into a greased 8x8 baking dish.

Top with the Pepper Jack Cheese.

Bake uncovered at 350 for 30 minutes or until the cheese on top is melted and golden.

Serve with cubed Italian bread or garlic bread. Our store bakery makes delicious toasted garlic bread chips that are perfect for this dip.

Pizza Dip

Corn and Black Bean Salsa

I first had this salsa when I was at a party hosted by my husband's (then boyfriend's) friend years ago.  The friend's wife had made it and I immediately fell in love. I asked for the recipe and have made it countless times since then. It is so easy and definitely a hit at parties.

 

 1 can black beans, drained and rinsed
 1 can shoepeg corn
 1 can Rotel
 ½ cup Zesty Italian dressing
 34 green onions, sliced thin
 ⅓ bunch of cilantro, chopped

Mix all ingredients together. Chill for at least 30 minutes to let flavors develop. Adjust the cilantro and dressing to taste. Serve with tortilla chips.

Grape Salad

Grape Salad is one of my favorite things about summer! Grapes are in season and so is Grape Salad. I love to take this to a cookout and keep a little for myself to eat later for a bedtime snack.

Yields12 Servings

 8 oz Cream Cheese (room temperature)
 8 oz Sour Cream
 ½ cup White Sugar
 1 tsp Vanilla Extract
 2 lbs Seedless Grapes (Red, Green or a combination of both)
 ½ cup Chopped Pecans or Walnuts
 2 tbsp Brown Sugar

Mix the cream cheese, sour cream, sugar and vanilla.

Stir in grapes and pour into a serving dish.

Sprinkle the top with the nuts of your choice and brown sugar (Optional)

Chill for at least 2 hours before serving.

OREO Brownies

These are the perfect treat for any type of get together. They are also very easy and kid friendly to make!

 1 box Duncan Hines dark chocolate fudge brownie mix
 1 package OREO Cookies
 1 container Duncan Hines vanilla frosting
 2 large eggs
 ⅓ cup water
 ⅓ cup vegetable oil

Preheat oven to 350 degrees

Place 2 rows of OREO cookies (the third row is for you!) into a gallon zip top bag. Crush the OREO cookies with your fingers or a rolling pin.

Empty brownie mix, eggs, oil, and water into a large bowl. Mix well.

Place approximately half of the crushed OREO cookies directly into the batter and stir.

Spread batter into 9x13in baking dish.

Bake for approximately 30 minutes or until middle is set.

Place 1/2 of the can of frosting in a microwave safe bowl and warm in microwave 30 seconds or until melted.

Pour melted frosting over brownies as they come out of oven. Top with remaining half of crushed OREO cookies.

Cool completely and enjoy!
