Perfectly Grilled Filet Mignon

 4 8 oz. tenderloin beef filets, thick cut
 olive oil
 salt
 pepper

Drizzle steaks with olive oil and rub on both sides. Season well with salt and pepper to taste. Allow steaks to sit for 30 minutes before grilling to bring steaks to room temperature.

Heat grill to medium-high/high heat. Allow the internal temperature of the grill to reach 500-550 degrees.

Place steaks on grill at an angle. If the back of the grill were 12 o'clock, place steaks turned to 2 o'clock for 2.5 minutes.

Then, turn steaks to the left to face "10 o'clock" and grill for another 2.5 minutes. (5 minutes total on the first side for medium-rare. If you prefer medium doneness, cook for 6-7 minutes on each side and for well-done 8+ minutes per side.)

Flip over steaks and repeat steps 3 & 4 on uncooked side.

Remove steaks from grill, place on a plate and cover with foil for 5 minutes to rest.
