Halve avocados, remove pits, scoop out flesh and place in a mixing bowl.
Squeeze the juice of 1 lemon over the avocado into the mixing bowl.
Mash the avocado with a pastry cutter, fork, or other tool of choice to the consistency of your liking.
Mince the clove of garlic and put the salt on top.
Using the back side of your knife (it's easiest when you use a knife with a wide blade), smash the garlic and salt together until it becomes a paste like consistency.
Add the garlic/salt paste to the avocado mixture and stir to combine.
Add the diced tomato and onion to the bowl and stir to combine.
For best flavor, cover the guac with plastic wrap, eliminating as many air bubbles as possible, and refrigerate for about 30 minutes.
