Easy Cinnamon and Sugar Palmiers

These Cinnamon and Sugar Palmiers are flaky and sweet and use only 4 ingredients! Try them for your next cookie exchange or party this holiday season.

Cinnamon and Sugar Palmiers

 2 sheets puff pastry, defrosted
 1 cup sugar
 1 tsp cinnamon
 ¼ tsp kosher salt

Preheat the oven to 400 degrees. Mix sugar, cinnamon and salt in a bowl. Sprinkle 1/4 cup of the mixture on a work surface. I use my countertops, but a wooden board or marble slab would work too.

Place one sheet of the puff pastry on the sprinkled sugar surface. Using a rolling pin, roll the sheet out until it is roughly a 13 inch square. Sprinkle another 1/4 cup of the sugar mixture on top of the dough and press it in by running your rolling pin over it a few times.

Next, fold the dough in about 1.5 inches on the left and right sides. Then, fold those same sides into themselves again until the folds meet at the middle. Finally, fold the right side onto the left side so the pastry resembles a book.

Lastly, cut the pastry into slices a little less than 1/2 inch thick and place slices cut side up on a baking sheet lined with parchment paper. Repeat process with second sheet of puff pastry.

Bake for 12 minutes or until golden. Then, flip the cookies over, sprinkle with some of the sugar left behind on the work surface, and bake for an additional 4 minutes or until sugar is starting to caramelize. Remove from the oven and cool on a rack.
